Knife Sharpening for
Home Chefs
Your spend the hard earned money on great quality knives. Let us help you make them last!
You put in the hours, had a long day, and you want to be able to relax and enjoy your time off. Nobody wants to have to work with a dull knife... it makes tomatoes into mush, breaks celery instead of cutting it, and overall makes cooking more tedious than enjoyable.
When you use a knife, you just want it to work. We'll help you get it there so you can spend less time cutting and more time enjoying!
Why shouldn't I do it myself?
While some swear by their honing rod / kitchen steel, drag through sharpeners, and their own whetstones, so lets look at why they may not be the best choice for you!

Honing Rod / Kitchen Steel
To put it bluntly, these are NOT meant to sharpen your knife!
A ceramic honing rod is designed to refine your edge, meaning you've already had it razor sharp and its just worn down a little bit.
A kitchen steel or steel rod has one real purpose... to deburr the edge of your blade. Narrow bevel angle blades will pick up a small burr over time and with active use. A kitchen steel is meant to work this burr back and forth removing it gently.
The biggest tricks to using them properly are knowing your angles, properly positioning your blade, and using controlled strokes and pressure.

Drag-Through Sharpeners
While these may work for a in a fix, they can easily do more harm than good when sharpening.
Normally they use hardened carbide blades shaped in a V. As you drag your knife across it, it's trying to shave the metal off of your edge. Typically though after some use, these carbide blades dull and can cause chipping and jumping along the blade. God forbid you apply too much pressure and snap off a large chip on an expensive hardened Japanese Steel Knife!
They also typically place ceramic rods in a V shape to try to hone the edge. What this can do though is create a burr without properly working it off. The next issue is the angle of sharpening. Many of them come preset to 20-degrees or more, which when done freely by hand can cause an uneven edge.

Whetstones
This is the more ideal way to sharpen your knives, but all is not exactly what it seems...
It takes time and practice to become proficient at sharpening on a whetstone. They can range from a few dollars per stone grit to over $1000 for high quality stones. That's a large investment both in time and money to be able to sharpen your knifes!
They can do an amazing job without a doubt, but your skill level and time will play a big part in whether you're successful or not. Just like any other sharpening method though, you can quickly ruin your knives if you don't have any experience yet, so if you insist on going this route I highly suggest you go purchase some Dollar Tree knives to practice on before you try your high quality kitchen knives.
